Sweet Potato-Apple Hash

On a recent visit to the farmer's market, I was inspired by a whole foods seasonal recipe which was a sweet potato and cranberry hash with honey for the sweetener. It tasted delicious (yes, there are plenty of samples at the North Hills Farmer's Market). With many apples at hand, I decided to do a take on this recipe and use the apples for the majority of the sweet flavor.




Sweet Potato-Apple Hash:

Ingredients:

1 apple, diced
1 large or 2 medium sweet potatoes, diced
1/2 medium onion, diced
2-3 tbsp dried cranberries
1 tbsp vanilla extract
1 tsp lemon juice
2 tbsp water
2 packets of Truvia/sweetener
1/2 tsp ground cinnamon

Recipe:

(1) Preheat oven to 400 degrees F. Dice the apples, sweet potatoes, and onion. Toss in a large bowl.
(2) Add the dried cranberries, vanilla extract, lemon juice, water, sweetener, and cinnamon. Mix and spread onto baking sheet.
(3) Bake in the oven at 400 degrees F for 30-40 minutes. Check after 20 minutes to toss the hash and allow to evenly brown.

The Low-cal Mojito: All the Mojo without the Crazy Sugar

Fish Stew with Turkey Sausage

The fall feels like it is rolling in. My plants hate this quick temperature drop. Everyone and everything around me is in need of some comfort food.

Usually when people describe comfort food, I hear of mac and cheese, casseroles, meatloaf, and other delicious items. When I think of comfort food, I think of what I grew up with... fish soup. My mother made the most delicious one but it used a full head of fish, many vegetables, an enormous pot, and many hours of labor.

She would start around 9 am procuring the ingredients but the fish soup would take the whole day to make and cook down. It was always ready by dinner time and it was perfect. I wish I had the energy, strength, and courage to make a dish like that. But very honestly, I don't....not A not B, and definitely not C.

Therefore, to make what I call comfort food, I had to use quick and easy ingredients working towards the flavor and taste of comfort. I am impressed with the result. I am impressed with the taste. I am almost certain that my mother would be proud but that is less important. I am proud of the end result. Hope you enjoy this as much as I do.



Ingredients:

1-2 Tilapia filets
3-4 stalks of celery, chopped
1/2 red bell pepper, diced
1/4 red onion, sliced or diced
6-8 large shrimp, cooked and frozen
1/4 cup diced Smoked Turkey Sausage (I used Butterball)
1/4 tsp fennel seeds
1 pinch of dried Mediterranean Oregano
1/4 tsp dried thyme
dash of Creole Seasoning (not particularly necessary)
1 tbsp tomato sauce or tomato paste
1 tbsp ketchup
1 tsp mustard
1/4 tsp garlic powder
dash of ground black pepper

Recipe:

(1) In a medium sauce pan, sprayed with olive oil, saute red onion on medium heat, until browned.
(2) In a medium-sized pot, saute celery and red bell pepper until wilted. Add onions to this dish.
(3) Add 1 cup of water to the pot and bring to a boil.
(4) In the medium sauce pan, add the fennel seeds, turning occasionally to brown.
(5) In the pot with the vegetables, add the remaining seasonings: thyme, oregano, creole seasoning, mustard, garlic powder, black pepper, and ketchup, followed by the tomato paste.
(6) When the pot begins to boil, add the tilapia and shrimp. This will extract a lot of shellfish flavor.
(7) Lastly add the diced sausage that is already cooked. I used a type that is fully cooked to save myself the time.
(8) Bring this to a simmer, leaving the lid off to allow the soup to reduce (approximately 8-10 minutes).

Serve and enjoy. This a delicious, hearty dish that provides both nourishment and energy. Definitely something great to savor when the temperature begins to drop. Sit back and enjoy.

Barbeque chicken and veggie frittata


On an amazing trip to Grand Cayman, I finally had time to relax, enjoy, and spend a morning having delicious breakfasts. We stayed in a condo through a timeshare ownership. I had never done that before but 7 days of relaxation was great. The opportunity to either cook or enjoy the local cuisine was fantastic. One morning, while everyone slept, I got up and made a frittata for the first time. It was super easy, especially using some quick ingredients that I had on hand, including leftover barbeque chicken from the previous evening.


Barbeque chicken and veggie frittata 

Ingredients:

1/2 cup barbeque chicken (diced)
1/2 cup frozen mixed bell peppers (thawed)
5 egg whites
1/4 cup nonfat milk
1/4 tsp ground black pepper 
garlic powder + onion powder or everyday seasoning (Trader Joe's)
1/4 cup yellow onion (diced)
1/3 cup shredded cheese (three cheese blend)
1/4 cup shredded turkey meat (deli meat)

Recipe:

(1) Start by carefully oiling a pan (spray canola oil or olive oil will work great). The pan should be heat tolerant at least > 425 degrees (F). Preheat pan on medium heat on stove top. Preheat oven to 420 degrees (F).

(2) Add diced onions and bell peppers to pan to get to medium brown.

(3) Prepare egg whites by whisking with nonfat milk. Add to slightly browned onions. Swirl pan as needed to completely coat with egg mixture.

(3) Add diced barbeque chicken and shredded turkey meat uniformly amongst the pan before the eggs have fully set.

(4) Be careful not to disturb pan. Allow to cook on low-to-medium heat until there is only a slight jiggle at the top.

(5) Put the frittata in the oven to complete cooking (approximately 8-10min).

(6) Remove frittata from oven and sprinkle cheese and replace into oven for an additional 5-8 minutes until cheese has both melted and browned.

(7) At this point, the frittata is complete and should look like picture to the right. Allow to cool for 5-10min before serving. Enjoy while hot!

Believe me, this frittata is so delicious. It is a great cure for the morning following a long night out on the town. Trust me :)

Sweet and Spicy Black Bean Salad

For a festive start to the new year, we brought our friends together for a great bash. It involved some football, some delicious bites, followed by some soca music and tasty beverages.

In order to create something light, yet delicious, especially after many holiday parties, we made a menu of ginger-peach chicken with multigrain waffles, sweet potato fries, and black bean salad. The latter could be eaten alone or topped onto a chip.

All of the food was joyfully received (and eaten. I may even saw a licked serving platter.) Additionally, I received many complements on the black bean salad. especially as everyone was shocked by the sweet, tangy, and subtly spicy combination.

To satisfy the many questions, I have provided the recipe here for more to enjoy. Happy 2013!!

Sweet & Spicy Black Bean Salad

Ingredients:

2 cans - reduced sodium black beans
1 can - whole kernel sweet corn
1/4 cup mild salsa
1 tsp garlic powder
2 tsp red pepper flakes
1/4 tsp adobo light
1/2 tsp freshly ground black pepper
1 tbsp lemon juice
1/4 tsp habanero hot sauce
1 splenda packet or sugar substitute
1 tsp lime juice

1/2 red onion, diced
1-2 tsp cilantro, fresh & finely chopped

Recipe:

(1) Drain and rinse the black beans and corn kernels. Set aside.
(2) Mix the salsa, diced cilantro, hot sauce, lemon and lime juices, black pepper, splenda, garlic powder, and adobo until well combined.
(3) Combine the black beans, corn, diced red onion, and spiced salsa.
(4) All to marinate for 4 hours to overnight in the refrigerator.
(5) Garnish with cherry tomatoes or fresh cilantro sprigs and serve.

Berry Shortbread Bars

As an active member of various organizations, I often have to prepare a dish or light bite for socials and other networking events. With an over-flowing freezer and the need to clear some space, I pulled out a bag of frozen berries and decided to make a shortbread based bar, but incorporating a little granola (i.e. granola bars) to make this a quicker, easier, and more fiber-full treat. I was pleasantly surprised by the outcome. 

Berry Shortbread Bars

Ingredients:

Crust:
1 cup whole wheat flour
1/4 cup sugar or sugar substitute
1 pinch salt
1/2 cup fat free sour cream
1 1/2 chewy granola bars

Filling:
3 cups frozen or fresh blueberries
1/4 cup sugar or sugar substitute
1/2 tbsp lemon juice
1 tbsp whole wheat flour
1/8 tsp ground nutmeg

Topping:
2 tbsp butter
3 tbsp nonfat greek yogurt
1/4 tsp cinnamon
1/2 cup brown sugar or substitute
1 cup whole wheat flour

Directions:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking pan.
  • Start by making the crust. In a medium bowl, stir together the 1 cups flour, 1/4 cup sugar, crumbled granola bars, and salt. I used the kashi vanilla almond bars because they are awesome and the flavor will not overwhelm the filling. An oat and honey granola bar would work also. Cut in the 1/2 cup sour cream until the mixture resembles coarse crumbs. Beat egg and vanilla together; stir into the crumb mixture until a dough forms. Press into the bottom of the prepared pan. Note: If the mixture is too sticky, add a little oatmeal and mix in until combined.
  • Bake for 12 to 15 minutes in the preheated oven, until golden. Remove from oven and set aside to cool slightly. Meanwhile, prepare the blueberry mixture.
  • Combine the 1/4 cup sugar or sugar substitute and nutmeg; sprinkle over the blueberries. Add the lemon juice. Set aside.
  • Make the topping: In a medium bowl, cream together the 5 tablespoons butter and brown sugar until smooth. Alternatively put in a mini food processor to make this even faster. Lastly, mix in the flour, so that the mixture is crumbly like streusel. Sprinkle over the blueberry layer.
  • Bake for 20 to 25 minutes in the preheated oven, until browned. Cool before cutting into bars.

Moroccan Pickles: Using surplus home-grown goodness

I planted my first garden this year, or should I say my mom planted my first garden. I called will a "help me" plea. I didn't know how to use the hard-clay soil in North Carolina. I was use to the soft soil of Massachusetts. She was excited to visit and to help. I was thrilled and I have been reaping the benefits since. We decided to plant several herbs, including scallions, green onions, basil, thyme, and more. For the vegetables, I insisted on lettuce, so, of course my mom planted three different types, 4 heads of each. So you get the idea, when I would be satisfied with one or two plants of each vegetable or fruit, she went all out and doubled, sometimes tripled, the number. It has been terrific and so far controllable (however, this is only the beginning of the harvest season).


With extra herbs on hand, extra vegetables, I decided my first try at quick pickles using the recipe from Joy of Cooking plus several additional seasoning. Think Moroccan Sweet Pickles:

Moroccan Sweet and Spicy Pickles:

Ingredients:
1 tbsp whole mustard seeds
1 tsp Harissa
2 tsp lemon juice
1/2 tsp Cayenne Pepper
3 cloves garlic
black pepper
1 1/2 tsp salt
1 cup water
1/2 cup white vinegar
1/2 cup cider vinegar
1 cup sugar or sugar substitute (I prefer Stevia + Splenda)
2 dashes of garlic powder
Surplus veggies (I used cucumbers, green onions, scallions, zucchini)

Importantly, make sure to pre-clean and sterilize your mason jars before pickling. I usually do it the day before to have it ready for the process.

Spicy Cajan Chicken Bites



With some thawed chicken and in preparation for a few guests, I decided to create something fast, tasty, and spicy. Oh spice, how I love thee !?! These nibbles are great to prepare right before guests arrive. You could serve them as is or with a dipping sauce, say a barbeque sauce mixed with a bit of ranch dressing. I particularly like KC's new Southern style BBQ sauce, which they just released and sent me a sampler of as part of the Foodbuzz Tastemaster Program. But you know me, if I don't like something, I won't recommend it. 




Spicy Cajan Chicken Bites


Ingredients:
1 tbsp apple cider vinegar
1 tsp cajan seasoning
1/2 lb chicken breast
1/2 tsp cayenne pepper
1 tsp no salt added seasoning (Trader Joe's)


Recipe:
1) Clean and dice chicken breasts
2) Add cajan seasoning to a non-stick skillet and heat skillet to medium heat
3) Add chicken breast to pan, brown on both sides. Add seasoning and cayenne pepper.
4) When chicken is almost done, add apple cider vinegar to pan. Toss to coat. The vinegar will help keep the chicken moist and lock in the seasonings.
5) Reduce heat to a simmer and continue to cook until chicken is cooked through. Serve immediately with some  dipping sauce.


Dipping Sauce

1/4 cup KC Masterpiece Southern Style Barbeque Sauce

1/8 cup Lite Ranch Dressing
1 tbsp finely chopped chives

Sausage-stuffed jalapenos

Moving to the south has been a wonderful change. The seasonal ingredients like jalapenos growing in my backyard is phenomenal. We have also been taking advantage of a CSA box, Lee's Produce NC, for a weekly delivery of fresh ingredients straight from the farm. If you have the option for this in your area, I would highly recommend it. With a bushel of jalapenos to use, I came up with this recipe using pantry ingredients.


Sausage-stuffed jalapenos


Ingredients:

1 smoked sausage link, finely-chopped
4-6 medium to large jalapenos
1/8 cup cottage cheese
1/8 cup fat free sour cream
2 tbsp greek yogurt (strain if runny)
1/8 cup salsa
shredded cheese (cheddar, mozzarella, gouda, or your favorite)
black pepper and salt, as needed



Recipe:

(1)         Cut jalapenos in half, length-wise. Using a spoon, scrape out the insides of jalapenos and save in a medium-sized mixing bowl. (Note: if you don’t want these two spicy, these contents can be discarded.)
(2)         Preheat oven to 450 degrees F.
(3)         Add to the mixing bowl the diced sausage, cottage cheese, sour cream, greek yogurt and salsa. Add salt and black pepper to taste.
(4)         Spoon the contents of the mixing bowl into each jalapeno half. Top with shredded cheese.
(5)         Bake jalapenos for 20 min in the oven or until slightly browned at the edges.
(6)         Remove stuffed jalapenos from oven and allow to cool 5 min before enjoying.

This recipe is fantastic if you need an appetizer for a party or a potluck. We just couldn't stop popping them in our mouths once this got out of oven. Enjoy the spicy goodness.

Braised Kale with Apples and Rosé





I recently had a few girlfriends over to catch up, watch a movie, and relax. It was an enjoyable evening. I only had a limited time to prepare a few sides for the movie-watching experience. With a lot of kale from a recent trip to the grocery and some delicious Rosé from Chatham Hill winery I decided on this pairing.


Braised Kale with Apples and Rosé


Ingredients:
canola or olive oil spray
1/2 red onion, chopped
1/2 apple, diced
1/2 bell pepper, chopped (optional)
1 bunch of Kale, chopped
1/2 cup of Rosé wine
Seasoning blend (my favorite is from Trader Joe's)
2 tbsp apple cider vinegar
salt and black pepper, to taste


Recipe:
(1) Spray a sauté pan with canola oil.
(2) Add red onion, apple, and bell pepper, if using, to pan and allow to brown slightly.
(3) Add the kale and the next three ingredients. Allow the kale to cook until completely wilted and slightly brown.
(4) Add salt and pepper, to taste.



Enjoy the braised kale with a glass of the Rosé. It has lovely strawberry flavor notes. This was so quick and easy. A great way to get your calcium, vitamin B6, vitamin C, fiber, and, of course, your daily wine.

A wine complement: Bacon-wrapped Shrimp

For a recent wine tasting event, featuring red wines from Pinots to Sparkling ones, I prepared a quick and easy pairing. I was excited that it was a hit. Did I mention how easy it was. Check out this recipe and try it for your next gathering.



Bacon-Wrapped Shrimp

Ingredients

Turkey Bacon (Jennie-O or Butterball)
Medium-sized Shrimp (frozen)
Red Pepper Flakes
No-salt added Season Blend (Trader Joe's)

Recipe:
(1) Spray a baking sheet with canola oil. Preheat oven to 350F.
(2) Cut turkey bacon into halves or thirds.
(3) Wrap shrimp with the turkey bacon, with the ends tucked underneath.
(4) Assemble wrapped shrimp on a tray.
(5) Dash red pepper flakes and seasoning blend to your liking.
(6) Bake for 20-30 min until you have reached your desired level of crispiness.

I loved this dish paired with a Pinot Noir. I also work with Chatham Hill winery and I know their Riesling would be awesome with this. Give it a try and let me know what you think ;)

Yummy Tex-Mex Slaw

For our monthly potluck, I recently put together a southwestern slaw that I adapted from allrecipes.com. I didn't realize it would be such a hit so even though I don't have a picture, I will post the recipe. If I were you, scale up how much you make because this one is hard to stop eating, the cabbage does shrink in size after the incubation, and you might want to leave some aside for yourself after serving it.

Spicy Tex-Mex Slaw

  • Ingredients:

  • 3 cups shredded cabbage
  • 1 can corn, drained and rinsed
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 jalapeno pepper, diced (seed only if you don't want it spicy)
  • 3 tablespoons chopped fresh cilantro
  • 1/4 cup canola oil (optional: I left it out)
  • 4 tablespoons apple cider vinegar
  • 1 tablespoon white sugar or 2 stevia (sugar alternatives)
  • 1 tablespoon pimento sauce (can be found in the caribbean food section)
  • 2 tablespoons dried garlic 
  • 1 tablespoon barbeque sauce
  • 1 teaspoon garlic salt
  • pepper to taste

Recipe:
  1. In a large bowl, toss together the cabbage, corn, onion, red pepper, jalapenos, and cilantro. Set aside.
  2. In a small bowl, whisk together the vinegar, bbq sauce, sugar, garlic salt, and pepper. Pour over vegetable mixture and toss to combine. 
  3. Cover and refrigerate for at least one hour. I refrigerated overnight.

Buttermilk Pie


A family recipe (from the in-laws).... Buttermilk Pie. I didn't realize how simple and easy it is and I did my sugar substitutions to make it even easier on the tummy, especially during this holiday season. I will keep this post quick and sweet, just like this pie recipe.

Buttermilk Pie


Ingredients:


1/2 cup Splenda
2 packets Stevia
3 tbsp White Whole Wheat flour
2 large eggs
8 tbsp butter or Smart Balance spread
1 cup lowfat buttermilk
2 tsp vanilla
9-inch pre-packaged pie shell (whole wheat if you have it)


Recipe:


(1) Mix the Smart Balance, Splenda, and Stevia together. Stir in the eggs (brought to room temperature) and mix with a fork or whisk until thoroughly combined.
(2) Mix in the flour until completely combined.
(3) Add the buttermilk.
(4) Pour batter into the rolled-out pie shell (unbaked).
(5) Bake in pre-heated oven at 425 F for 10 minutes.
(6) Lower the temperature of the oven to 350 F to continue to bake for 35 minutes. You will see the pie inflate and slightly brown when complete. Check with a fork or knife to ensure cooked in the middle.
(7) Allow pie to cool and settle before cutting and serving.


Enjoy this delicious treat. I enjoy it everytime I visit my in-laws and now with the recipe in hand, we can enjoy it more often.

Roasted Vegetable Salad with Chickpeas

A quick, easy, and delicious preparation for lunch is a roasted vegetable salad tossed with chickpeas. I made this for lunch for the week and it was the perfect thing to look forward to on the rainy, wet days. I used green beans, tomatoes, and yellow squash. Incorporate whichever veggies are convenient, your favorite, and even better, in season.

Roasted Vegetable Salad with Chickpeas


Ingredients:


2 tomatoes, sliced
2 yellow squash, sliced
3 cloves of garlic, finely diced or minced in can
canola oil spray
1/2 tsp seasoning salt, such as Adobo
1 tsp pepper
1 tbsp Za'taar spice blend
1 tbsp red pepper flakes


Recipe:


(1) Preheat the oven to 450 degrees F.


(2) In a bowl, toss the chopped vegetables with the garlic, seasonings, and spray with a few sprays of canola oil. This is definitely a way to reduce the fat and calories from a dish incorporating roasted vegetables. Tossing before laying on a tray, will reduce the amount of oil needed to coat.


(3) If you are patient, separate and spread the vegetables on a baking trays lined with aluminum foil. If you are not patient, simply pour the vegetables out onto the lined trays without sorting. The sorting will help as some vegetables will cook faster than others (e.g. tomatoes will finish before the squash). Bake for 15-25 minutes. If you do sort, pull out the baking trays when the vegetable looks slightly brown at the edges and look and feel tender to the touch.


(4) Toss the roasted vegetables with the drained and rinsed chickpeas. Finish with the red pepper flakes, Za'taar, and salt/pepper to taste.






Enjoy this salad alone or with your favorite sandwich...a fall/winter treat.

Apple Cider Swiss Chard


It was middle of the week, after a long day and running behind schedule, I needed a recipe that would be quick and under 10 minutes to prepare for guests that arriving any moment. I decided to finesse Swiss Chard that was sitting in the refrigerator, waiting for some attention.

Apple Cider Swiss Chard


Ingredients:


1 bunch Swiss Chard, chopped
1/2 onion, chopped
2 tbsp garlic, minced
1 tbsp apple cider vinegar
Canola oil cooking spray
salt and pepper, to taste


Recipe:


(1) Thoroughly wash and pat dry the swiss chard before use.


(2) Spray a medium saucepan with canola oil over medium heat. Add onion and garlic to brown. 


(3) Add Swiss chard to the saucepan, with any residual liquid serving to aide the cooking process. Add the apple cider vinegar. Sauté the chard until wilted. Add salt and pepper to taste.


This side pairs well with seafood, poultry, and red meat. The acidity of the vinegar will also pair well with many wines, such as a dry pinot grigio or very dry riesling. Feel free to add some spice like Cayenne if you want some heat and most importantly, enjoy!

Chicken with Roasted Summer Squash

After flipping through my 2007 Food and Wine cookbook, I was inspired by a quick Chicken with Zucchini salad recipe. I was cooking for some girlfriends and wanted to present something light and prepare something easy. Thankfully, I had all of the ingredients on hand and it was absolutely delicious. I love the tanginess of the lemon juice. I used red onions in place of Vidalias and topped with fresh basil (from my herb garden, which is finally doing well).



Chicken with Roasted Summer Squash
adapted from Food & Wine cookbook 2007

Ingredients:


1/4 cup fresh lemon juice
3 large garlic cloves, minced
1/2 medium red onion or 1 shallot, chopped
1 1/2 tbsp fresh spanish thyme, chopped
1 tsp Dijon mustard (optional, since used less oil)
1 tbsp extra-virgin olive oil
2 tbsp fresh mint, chopped
3 boneless chicken breast halves, with or without skin
3 medium yellow squash (1 lb.), sliced crosswise on a diagonal 1/3 inch thick
1/4 pound feta cheese
1-2 tbsp fresh basil, chopped (optional)
salt and ground pepper (best if fresh)


Recipe:



  1. In a blender, combine the lemon juice with 1-2 tbsp garlic, red onion, and spanish thyme and puree until smooth. With the machine on, slowly pour in 1 tablespoon of the olive oil. Stir in the mint and season the vinaigrette with salt and pepper.
  2. Light a grill or preheat a grill pan. In a shallow bowl, coat the chicken with 1/2 cup of the vinaigrette. Let stand for 5 minutes.
  3. Meanwhile, in a large bowl, spray the yellow squash with olive oil and season with garlic salt, pepper, and 1 tbsp minced garlic. Grill the squash, turning once, until tender and slightly charred, about 3 minutes total. Transfer the vegetables to a platter and keep warm.
  4. Season the chicken breasts with salt and pepper and grill over moderately high heat, turning once, until cooked through, about 10 minutes. Transfer the chicken to the platter and sprinkle with the feta cheese. Drizzle with the remaining vinaigrette, top with chopped basil, and serve.

Lemon bars with Almond-Cardamom crusts (Gluten-free delights)

In preparation for a monthly dinner with some girlfriends, one of whom doesn't do well with gluten, I investigated options for dessert. This course of the meal I have read, many gluten-free folks unfortunately have to pass up. 


With many lemons on hand, I decided to do a lemon bar using a version of an almond meal crust that I have done before. This time, however, I felt that something was needed to carefully pull together the flavor of the almonds with lemons. I added some cardamom and it did the trick. Hopefully, you enjoy it as much as I did. I almost couldn't stop licking the mixing spoon....I know, TMI.


Almond-Cardamom crust

Ingredients:

1 cup ground almond meal (processed almonds)
14 packets of Splenda + 1 packet of PureVia (or 3/4 cup cane sugar)
1/4 cup egg white
1/4 tsp cardamom, ground
1/4 tsp fine sea salt
1/8 tsp nutmeg
Spray oil (Vegetable or Canola...avoid Olive oil due to the flavor)

Recipe:

(1) Preheat oven to 350 degrees F. Spray an 8x8-inch square Pyrex dish with Pam or canola oil.

(2) In a mixing bowl, mix together the ground almonds, sugar, salt, cardamom & nutmeg. After thoroughly mixing, add the egg white. Mix to combine and spread the mixture into the baking dish and press lightly (with moist spatula) to form a crust.

(3) Bake the crust for 20 minutes. Cool completely before filling, allowing the crust to crisp more.







Lemon filling


Ingredients:


2 large eggs + 1/2 cup egg whites
14 packets of Splenda with 3 packets of PureVia or 1 1/2 cups granulated sugar
1/4 cup freshly squeezed lemon juice
2 tbsp greek yogurt
1/2 tsp vanilla extract
1/4 cup tapioca flour (best if freshly ground) or another gluten-free flour
zest of two small lemons (about 2 tbsp)
1-2 tsp powdered sugar (optional, for garnish)


Recipe:


(1) In a spice grinder, grind dry tapioca pearls, enough for 1/4 cup.


(2) Grate lemon zest and juice 2 lemons (1/4 cup lemon juice). 


(3) In a small bowl, beat together the eggs, egg whites, sweeteners, vanilla extract, lemon juice, lemon zest, greek yogurt, and tapioca flour.


(4) Pour filling on top of pre-baked almond-cardamom crust.


(5) Bake for 20 minutes. Cool completely and serve. 


This is a very fast recipe and great if you have other things going on in the background (during those cooling times)... I find it is best to stay out of the kitchen during these times so there is actually dessert left for guests. Hope you enjoy it. Next time, I will totally add finely chopped basil to the filling mix for an surprising and delicious twist.

Lentil Chicken Soup

For two weeks, I craved lentils. I remember the delicious lentils seasoned with cumin, garlic, and onion that my mom would miraculously put together after coming home from work when I was young. Recently, I was fortunate to have my mom visiting with us in North Carolina. It was a great visit. After a quick trip to Weaver Street Market, we made lentil soup. This time, we cooked together, making this dish extra special.

Lentil Chicken Soup

Ingredients:


1 cup lentils (8 oz.), picked over and rinsed
4 - 5 cups water (more or less depended on desired thickness)
olive oil cooking spray
1 medium onion, diced
3 garlic cloves, minced
1 cup diced tomatoes with juice
2 sprigs of thyme (fresh, if you have it) or 1/2-1 tsp. dried thyme
2 tbsp. apple cider vinegar
1/4 cup chopped chicken breast (optional)
1/4 tsp. cumin
dash of oregano
salt and pepper, to taste


Recipe:


1) Rinse the lentils with water. Begin boiling the lentils in water with the dried thyme, cumin, and oregano in a medium stock pot. Do not yet add the salt and pepper.


2) While the lentils are boiling, spray a medium sauté pan with olive oil. On medium heat, add the diced onions and minced garlic. Sauté until slightly browned and add to the stock pot with lentils.


3) Reduce the heat on the lentils to a simmer for 30-45 minutes, stirring often to prevent the bottom from burning. Add the tomatoes and apple cider vinegar after 15-20 minutes to the pot. 


4) While the lentils simmer, spray the medium sauté pan again with olive oil. On medium heat, add the diced chicken breast. Sauté until cooked through. Remove from heat and add cooked chicken to the stock pot.


5) Taste soup, adding salt and pepper, as needed. Serve in a 1/2 cup portion as an appetizer or a 1 cup portion as an entree with warm bread/flatbread/pita.
